Happy Pumpkin Cheesecake Day

Happy Tuesday and Happy Pumpkin Cheesecake Day,  today I’m doing something I haven’t done before on the blog, copy catting some recipes.  We are traveling today on a vacation (much, much more on that later) and this was the best way I could come up with to celebrate this day of Pumpkin Cheesecake without turning on the oven, I promise next year to come up with something spectacular to celebrate this special day.

Pumpkin Cheescake Snickerdoodles

This creation from The Recipe Critic combines one of my favorite cookies, Snickerdoodles, with another favorite, cream cheese, and pumpkin.  Sounds almost too good to be true, I’ll definitely be trying these out next month as we head into Thanksgiving, I’ll probably need to rehearse with a couple of batches before feeding them to friends and family. 

Pumpkin Cheesecake Bars

These guys from My Recipes combine the best of two worlds, chocolate and anything pumpkin.  Anything on a chocolate wafer cookie crust has my vote, and the traditional topping of whipped cream for pumpkin pie gets a cute spin, pipe it on and add mini chocolate chips for eyes and you have a spooky treat.

Pumpkin Cream Cheese Muffins

Dorothy Kern over at Crazy For Crust swears these Pumpkin Cream Cheese Muffins are just as good, if not better than the ones sold by the most major and ubiquitous coffee house in the world, but I’ll let you be the judge.  They look amazing, let me know what you think. 

Pumpkin Cheesecake Cupcakes

These cupcakes from Damn Delicious have to be good, they have all the makings of a great cheesecake with the graham cracker sprinkles on top to the cheesecake filling and vanilla buttercream frosting.  You could definitely “Halloween” these up for use next week and then pull them out again next month as we prepare to give Thanks.
