This week as we wind up our look at Strawberries in the month of May we are going to finish up with recipes, one of my favorite combos is strawberries and chocolate so a strawberry cookie recipe with chocolate chips was a natural yes for me. I found the recipe at Sally’s Baking Addiction and it’s great!! The cookie recipe is a cake mix based recipe which automatically means it’s going to be moist, I whipped these up on a Sunday morning to see what we thought, they are moist, easy to make and very flavorful and I love the hit of chocolate from the chocolate chips. I used a Betty Crocker Strawberry Cake mix, to start off you mix the cake mix with a teaspoon of baking powder and set that aside.
In another bowl, you combine 2 eggs, 1/3 C. vegetable oil, and 1/2 tsp. vanilla and add that to your cake mix/baking powder mixture to create your dough. This is when it will turn pink.
Then you fold in 1 1/4 Cups of chocolate chips, drop the dough onto a cookie sheet. Each dollop should be about 2 tablespoons and bake for about 10 minutes, my oven runs hot so 9 minutes did it for me. If you let them bake too long they will start turning brown and lose their pink color.
After you remove the pan from the oven, let the cookies rest on the cookie sheet for three minutes before moving them to a wire rack to cool.
The cookies are all nice and soft and the chocolate chips make them extra gooey.
