Summer Salads: 9 Day Slaw

Last week on Friday I posted on Instagram and Facebook lunch I was cooking, I ended up with a day with no appointments and decided to cook and make us a nice lunch. One thing I like to do this time of year is to make things ahead like salads and side dishes and then all we need to do is grill something to go with it and we have a meal, especially since we’re both trying to lose some of our “winter weight”.  I made three salads on Thursday for us to have on Friday and several days after that and put a chicken in the oven to roast Friday morning and I had a lot of people ask me about recipes for the salads and the chicken so I thought I would share the recipes here this week. 

The first recipe I’m going to share this week is 9 Day Slaw, this is a recipe my Grandma Minnie always made, especially in the Summer. It’s pretty quick, easy and DELICIOUS. A quick tip, the recipe calls for 3 pounds of chopped cabbage but I bought pre-chopped cabbage at Sams’s the other day, it comes in two-pound bags and I used two of them, the spices and dressing make enough to cover four pounds. Here we go!!!!

9 Day Slaw

Ingredients:
3 Pounds Chopped Cabbage
2 Green Peppers Chopped
1 Large or 2 Small Red Onions
2 Cups Sugar
Chop all the vegetables and place in a large bowl, sprinkle one cup of sugar over the vegetables and stir then sprinkle another cup of sugar over the vegetables and let sit for up to an hour. 

Dressing Ingredients:

1 Cup White Vinegar
1 Cup of Oil ( vegetable or canola)
1 Tablespoon Salt
2 Tablespoons Celery Seed
2 Tablespoons Sugar
Combine all the Dressing Ingredients in a saucepan on medium heat and bring to a boil, remove from the heat and pour over your Cabbage and Vegetable mixture in the bowl and stir to cover all the vegetables. I usually let it sit and cool off then place in a bowl with a lid and store in the refrigerator. The slaw will keep up to 9 days, thus the name 9 Day Slaw.

 

This Slaw goes great with everything, BBQ, Hot Dogs and Hamburgers, Ham, Chicken, and Pork. Let me know if you try and what you think. Enjoy!!!
