Summer Salads: Cauliflower & Black Olive Salad

This salad has long been a staple at our house and my mom has made it for years and years, long before the Cauliflower craze took off that we’re all into now. It’s just 3 ingredients, Pepper and Salt, and SO good, especially if you’re like me and LOVE Black Olives. The only drawback to this recipe is for those people who don’t like Mayonnaise because that’s the dressing for it, just straight up Mayonnaise, personally, it’s one of my favorite condiments and it mixes with the salt and pepper and the juice from the Black Olives to make a great dressing. Try It, You’ll Like It!!!

Cauliflower & Black Olive Salad Ingredients:

1 Large Head of Cauliflower or 2 smaller heads
1 Large Can of Sliced Black Olives
1  Cup of Good Mayonnaise ( start with a cup and you may need to add a little more)
Pepper to taste (I like lots of pepper but do what you like)
Salt to taste

Break apart the head of Cauliflower after washing and place all the florets in a large bowl. Add your Mayonnaise and stir to cover all of the Cauliflower, drain your Sliced Black Olives and add them to the Cauliflower and Mayonnaise mixture and add Pepper and Salt. Stir to combine all the ingredients and taste for seasoning. Now you have a beautiful and delicious Black and White Salad!!!!!

I make this all Summer long and sometimes this is all I’ll have for supper if I just need something to tide me over. It goes great with Chicken dishes and Pork and grilled meats. Enjoy!!!
