Summer Salads: Grape Salad

My mom found the recipe for a Grape Salad a few years ago and tried it out on us and now it’s one of our Summertime favorites. Mom has taken it to different functions and dinners and now her church calls her and asks her to bring Grape Salad for funeral dinners. It’s a pretty simple salad to make although you do need to get your hand mixer out to make the dressing. Grape Salad stores great in the refrigerator, who doesn’t love a cold grape, and with the dressing and topping it’s almost like dessert, actually we each had a small bowl of it yesterday for dessert at lunch. So, grab several bunches of grapes, red, green or both, and whip up this Summer treat for everyone to Enjoy!!!

Grape Salad:

2 lbs Green Grapes
2 lbs Red Grapes
1- 8 oz package Cream Cheese at room temp
1-8 oz Sour Cream
Half Cup Sugar
1 Tsp. Vanilla

Topping:
Half Cup Brown Sugar
Half Cup Chopped Pecans

Wash and dry your Grapes, I run them under cold water then lay them out on the kitchen counter on paper towels, pat them dry and then let them air dry for a little while. The dryer the Grapes are the better they will take the dressing and you won’t have a watery salad. 
In a bowl combine softened Cream Cheese, Sour Cream, Half Cup Sugar and Vanilla. Using your hand mixer beat this mixture until it’s smooth.
Pull all the Grapes off their stems and place them all in a 9×13 casserole dish, pour the Cream Cheese/Sour Cream mixture over the Grapes and stir well to get all of the Grapes covered.
Make your topping of Brown Sugar and Pecans, you can either sprinkle it over the top of the salad now or wait until right before serving. Personally, I like it sprinkled on and let it combine with the Cream Cheese mixture.
And serve!!!

This salad is simple and very refreshing and like I said it also makes a healthy-ish dessert. It works well with grilled Chicken and Pork or other salads if you’re trying to eat light. Check back tomorrow for our last Salad of the week, this one combines Broccoli, Bacon and Sunflower Seeds. Yum!!!!
